## Ingredients

For pizza base

- 2 cups of plain flour
- 1 tsp of dry yeast
- 1 tsp of sugar
- ½ tsp of salt
- 1 tbsp of oil
- 1 cup of warm water

For chicken marination

- 1 tsp of lemon juice
- 1 tsp of paprika powder
- ¼ tsp of turmeric powder
- Salt to taste (¼ tsp)

For topping

- 100 gm of chicken
- Yellow, green, red capsicum chopped
- Olives
- Mix herbs
- Black pepper
- Pizza sauce
- Chilli flakes
- Fresh parsley
- Mozzarella cheese

## Procedure:

1.  Take a big bowl.
2.  Add warm water in a bowl.
3.  Add dry yeast, Sugar and mix well.
4.  Cover the bowl with lid and keep it aside for 10-15 minutes or until yeast activates.
5.  After 10-15 minutes, mix activated yeast gently.
6.  Add plain flour, salt to taste and oil then mix everything well.
7.  Add water and make smooth dough.
8.  Knead the dough well or until it becomes soft and non sticky.
9.  Add few drops of oil in bowl and grease it.
10. Keep the dough in the bowl and cover with clean wrap or airtight lid.
11. Keep the dough bowl aside on the kitchen counter or warm place e.g. in the oven for 2 hours.
12. Dough will ferment in 2 hours.
13. Cut chicken into small pieces and wash with the water.
14. Drain the excess water from the chicken.
15. Add 1 tsp of lemon juice on the top of the chicken pieces.
16. Add paprika powder, turmeric powder, salt to taste and mix everything well.
17. Keep the fry pan on flame.
18. Add chicken pieces in the pan. Don’t add oil and water.
19. Cook the chicken on medium flame for 5 minutes.
20. Chicken will release the water then reduce the flame and cover the pan with lid.
21. Cook it for 7-8 minutes on low flame.
22. Open the lid, fry the chicken on medium flame until chicken becomes dry and golden in colour.
23. Take out the chicken in a bowl.
24. Preheat the oven on 180 degree Celsius.
25. Take the pizza dough bowl and open lid.
26. Dough would have doubled in size.
27. Sprinkle plain flour on the dough and punch it.
28. Knead the dough gently and make 2-3 balls.
29. Sprinkle some plain flour on top of the rolling board or clean kitchen counter.
30. Roll the pizza base in to 1 inch diameter or as you like thin, but don’t roll very thin.
31. Grease the pizza pan with oil and place the rolled pizza base on it.
32. Prick the pizza base with the help of fork.
33. Apply pizza sauce on it.
34. If you like more pizza sauce, you can apply thick layer of pizza sauce.
35. Add mozzarella cheese on the top of the pizza base.
36. Add chicken pieces on it but don’t make thick layer of chicken.
37. Add capsicum and olives.
38. If you like extra cheese, add on it.
39. Sprinkle black pepper powder, mix herbs, chilli flakes, parsley.
40. Put the pizza pan in the oven and bake it for 15-20 minutes on 180 degree celsius.
41. Take out the chicken pizza and let it cool down. Then cut it into small pieces.
42. Enjoy chicken pizza with lovely friends and family members.


Chicken pizza


Sweet and spicy chicken drumstick is a very tasty and delicious chicken recipe. It is made with honey, soy sauce, chilli sauce. The combination of sweet, spicy and sour is a unique and delicious. The taste of chicken drumstick is awesome.

## **Ingredients-** **सामग्री**

- 7-8 chicken legs (चिकन लेग)
- ½ tsp of turmeric powder (हल्दी पाउडर)
- ½ tsp of black pepper powder (काली मिर्च पाउडर)
- 1 tbsp ginger garlic paste (अदरक लहसुन की पेस्ट)
- 1 tsp of paprika powder (पैप्रिका पाउडर)
- 1 tbsp of corn flour(मक्के का आटा)
- 1 tsp of soy sauce (सोया सॉस)
- 1 tsp of chilli sauce (चिली सॉस)
- 1 tsp of honey (शहद)
- 1 tsp of lemon juice (नींबू का रस)
- salt to taste (नमक)
- Oil (तेल)

## Procedure:

1.  Wash and cut the chicken legs slightly.
2.  Add salt, turmeric powder, black paper, lemon juice and 1 tsp of ginger garlic paste in chicken legs.
3.  Mix it well.
4.  You can add 1 tsp of oil.
5.  Pre-heat the oven on 200 degree celsius.
6.  Take a baking tray and place the foil paper or parchment paper on it.
7.  Place the chicken legs on tray and spray the oil on the top of legs.
8.  Keep the tray in the oven.
9.  Bake the chicken legs for 20 minute on 200 degree celsius.
10. After 20 minutes, flip the chicken legs and place in oven.
11. Bake it for 20-25 minutes on 200 degree celsius.
12. Take out the tray.
13. Heat the fry pan.
14. Add 1 tsp of olive oil.
15. Add 1 tsp of ginger garlic paste and saute it.
16. Reduce the flame.
17. Add soy sauce, chilli sauce, paprika powder, pinch of salt, honey and mix it well.
18. Add ½ cup of water and mix it.
19. Add 2 tbsp of water in the corn flour and mix it.
20. Pour the corn flour mixture and mix it well.
21. Cook it on low flame until sauce becomes thick. Stir continuously.
22. Add baked chicken legs and mix it well.
23. Fry the chicken legs on medium flame for 1-2 minutes.
24. Turn off the flame and take out the chicken legs in a serving plate.
25. Garnish with spring onion.
26. Our tasty and delicious chicken drumstick is ready.



Chicken drumstick recipe


Chicken mince (Keema) is made from chicken breasts by grinding it in a grinder machine.
It’s very simple and easy to make. It’s tasty and delicious. It is popular all over the world.

## **Ingredients-** **सामग्री**

- 250g of chicken mince (चिकन कीमा)
- 1 tsp of onion powder (प्याज पाउडर)
- 1 tsp of garlic powder (लहसुन पाउडर)
- ½ tsp of crush black pepper (क्रश काली मिर्च )
- 1 tsp of red chilli powder (लाल मिर्च पाउडर)
- 1 tsp of lemon juice (नींबू का रस)
- Salt to taste (नमक)
- 2 tbsp of plain flour (मैदा)
- 1 tbsp of bread crumbs (ब्रेडक्रम्ब्स)
- Oil (तेल)

## Procedure:-

1.  Take chicken mince in a bowl.
2.  Add lemon juice, onion powder, garlic powder, black pepper, red chilli powder and salt to taste in the chicken mince.
3.  Mix it well and keep it aside.
4.  Make a dry mixture for kabab coating.
5.  Take plain flour and bread crumbs in a plate.
6.  Add some onion powder, garlic powder and salt to taste and mix it well.
7.  Grease the palm with oil and take a small portion of chicken mixture.
8.  Make a small ball and give it a flat shape (don’t make thick)
9.  Coat the chicken tikki in dry mixture very well.
10. Keep it in a plate. Make all tikki in similar way.
11. Turn on the flame and keep a pan on the gas.
12. Add 1 tbsp of oil in a pan and spread it all over.
13. Place the tikki on pan and add some oil over the tikki.
14. Cover the pan with lid and cook it for 4-5 minutes on low flame.
15. Then open the lid and flip the tikki on other side.
16. Cook it for 5-6 minutes on low flame until it turns golden brown.
17. Chicken kabab/tikki is ready. Take out it in a serving plate.
18. Serve the hot chicken kabab with tomato ketchup or you can make chicken burger.


Chicken Keema Tikki recipe


## Ingredients- सामग्री

- 250g of chicken mince (चिकन कीमा)
- 3 tbsp of breadcrumbs (ब्रेडक्रम्ब्स)
- 2 tbsp of gram flour (बेसन)
- ½ cup of yogurt (दही)
- 1 onion finely chopped (प्याज पाउडर)
- 1 tbsp of ginger-garlic paste (अदरक लहसुन की पेस्ट)
- ½ tsp of turmeric powder (हल्दी पाउडर)
- 1 ½ tsp of red chilli powder (लाल मिर्च पाउडर)
- 1 tsp of chicken masala (चिकन मसाला)
- 1 tsp of coriander- cumin seeds powder (धनिया जीरा पाउडर)
- Salt to taste (नमक)
- coriander leaves (धनिये के पत्ते)
- Oil (तेल)

## Procedure: –

1.  Take a big bowl.
2.  Add chicken mince in the bowl.
3.  Add 1 tbsp of yogurt, ½ tsp of ginger-garlic paste, turmeric powder, red chilli powder, chicken masala, coriander-cumin powder, salt to taste and coriander leaves.
4.  Mix it well together.
5.  Add bread crumbs, gram flour and mix it well.
6.  Grease the oil on palm.
7.  Take small portion of mixture and make the ball.
8.  Make all balls in the same way.
9.  Heat the oil in a pan.
10. When the oil is heated, place the chicken ball in oil carefully.
11. Fry the chicken balls on medium flame until it turns golden brown.
12. Take out the fried chicken balls on absorbent paper.
13. Take a bowl.
14. Add remaining yogurt, salt to taste, chilli powder, coriander-cumin powder, chicken masala, turmeric powder and coriander leaves in a bowl.
15. Mix it well. Add 1 cup of water and mix it again.
16. Heat a pan.
17. Add 1 tbsp of oil.
18. When the oil is heated, add chopped onion and mix it.
19. Add ginger-garlic paste and mix it.
20. Cook it on medium flame until onion turns golden brown.
21. Add yogurt mixture and mix it well.
22. If you want spicy curry, you can add more chilli powder.
23. Boil it.
24. Add fried chicken balls and mix it.
25. Cover the pan with lid and cook it for 10 minutes on low flame.
26. Open the lid and mix it well.
27. Serve the chicken kofta curry in a serving bowl and garnish with coriander leaves.
28. Tasty and delicious chicken kofta curry is ready.
29. We can eat chicken kofta curry with roti, naan or rice as well.


Chicken kofta curry recipe


## **Ingredients-** **सामग्री**

- 250g of chicken mince (चिकन कीमा)
- ½ cup of green peas (हरी मटर)
- 1 chopped onion (प्याज)
- 1 chopped tomato (टमाटर)
- ½ tsp of cumin seeds (जीरा)
- 1 tbsp of ginger & garlic paste (अदरक लहसुन की पेस्ट)
- 1 tsp of red chilli powder (लाल मिर्च पाउडर)
- 1 tsp of garam masala (गरम मसाला)
- ½ tsp of turmeric powder (हल्दी)
- Coriander leaves (धनिये के पत्ते)
- Salt to taste (नमक)
- Oil (तेल)

## Procedure:-

1.  Turn on the gas and put a pan on it.
2.  Add 1 tbsp of oil in a pan
3.  Heat the oil
4.  Add cumin seeds. When the cumin seeds crackle, add chopped onions and cook until it turns golden brown on medium flame
5.  Add ginger garlic paste and cook it for another 1-2 mins on low flame
6.  Add chopped tomatoes and mix it well
7.  Cover the pan and cook it for 3-4 mins on low flame
8.  Add turmeric powder, salt to taste, red chilli powder and mix it
9.  Add green peas and mix it.
10. Add chicken mince and mix it well
11. Add garam masala powder and mix it well
12. Cover the pan and cook it for 10-15 mins on low flame
13. Add fresh coriander leaves and mix.
14. Serve with bread, soft rounds, roti etc.




Chicken Matar Keema Recipe


Chicken legs recipe is very tasty. Today, I am making oven roasted chicken legs . It is so easy to make it.Chicken legs are also known as chicken drumstick. If you make this spicy chicken drumstick recipe, do let me know how it comes out.

### _**Preparation time :- 10 minutes.**_

### _**Marination time :- 4-5 hours or overnight.**_

### _**Cooking time :- 30 minutes.**_

## **Ingredients**

- 6 chicken legs
- 1 tsp of salt
- ½ tsp of turmeric powder
- 1 tbsp of coriander-cumin seeds powder
- 1 tbsp of red chilli powder (kashmiri)
- ½ tsp of garam masala
- 1 tbsp of ginger-garlic paste
- 1 tbsp of lemon juice
- 1 tbsp of olive oil
- Fresh parsley leaves
- Butter

## **Procedure:**

1.  Wash the chicken legs well.
2.  Marinate the chicken.
3.  Add salt to taste, turmeric powder, red chilli powder, garam masala, coriander-cumin seeds powder, lemon juice, 1 tbsp of oil on top of the chicken legs.
4.  You can mix all spices in a bowl then add.
5.  Mix everything well.
6.  Apply the spices on chicken legs well.
7.  Cover the chicken legs and keep it in the fridge for 3-4 hours or overnight.
8.  Take out the chicken legs from fridge.
9.  Rest it on room temperature for 10-15 minutes.
10. Preheat the oven to 230 degree celsius.
11. Place the chicken legs in baking tray and spray the oil on it.
12. If you like, add fresh parsley leaves on it.
13. Keep the tray in the oven and bake it on 230 degree celsius for 15 minutes.
14. After 15 minutes, take out the chicken legs tray and flip the legs to other side.
15. Again, keep the chicken tray in the oven and bake it for 12-15 minutes on 230 degree celsius.
16. Turn off the oven and take out the tray.
17. Apply some butter on the chicken legs.
18. Our tasty and spicy chicken drumsticks are ready to serve.
19. Serve the chicken drumstick with favourite sauce, salad or rice.

Spicy Chicken Legs


This chicken recipe is very simple and tasty. Today I am making dry chicken with simple masala which is easily available in our kitchen/ home.

## Ingredients

- 250 gm chicken thigh fillets
- 1 onion finely chopped
- 1 tomato finely chopped
- 2 tsp of ginger-garlic paste
- 3 tsp of red chilli powder (kashmiri)
- 1 tsp of coriander powder
- ½ tsp of cumin seeds powder
- 1 tsp of garam masala
- ½ tsp of turmeric powder
- Salt to taste
- Coriander leaves
- 2 tbsp of oil

## Procedure :

1.  Cut and wash the chicken well.
2.  Add chicken in a bowl.
3.  Add ½ tsp of salt, ¼ tsp of turmeric powder, 1 tsp of red chilli powder, 1 tsp of ginger-garlic paste, 1 tsp of lemon juice in the chicken.
4.  Mix everything well.
5.  Keep the chicken aside for 30 minutes.
6.  Keep the pan on flame.
7.  Add 2 tbsp of oil in pan.
8.  When the oil is heated, add chopped onion.
9.  Fry the onion on medium flame until it turns golden in color.
10. Add 1 tsp of ginger-garlic paste and mix it.
11. Cook it for few minutes.
12. Add chopped tomatoes and mix.
13. Cook it on low-medium flame until tomatoes become soft.
14. Add ¼ tsp of turmeric powder, 1 tsp of coriander powder, ½ tsp of cumin seeds powder, 2 tsp of red chilli powder, and mix it well.
15. Cook it for 1-2 minutes.
16. Add fresh coriander leaves and mix it.
17. Add marinated chicken and mix everything well.
18. Add salt to taste, garam masala and mix it well.
19. Cover the pan with lid and cook it on low flame for 10-12 minutes.(Don’t add water)
20. Open the lid carefully.
21. Mix chicken well.
22. Chicken releases the water.So we don’t need to add the water.
23. Cook the chicken on medium flame until it  becomes soft with thick gravy.
24. Turn off the flame.
25. Mix the chicken well. Garnish with fresh coriander leaves.
26. Serve the chicken in serving plate and enjoy with roti, rice, bread or naan.

## Tip:

- If you like curry, you can add water while cooking the chicken.
- If you like thick gravy chicken, don’t cook until gravy disappears.

Spicy dry Chicken masala


## Ingredients

Chicken marination

- 450 gm of chicken ( I use chicken breast)
- 1 tbsp of ginger garlic paste
- 1/2 tsp of turmeric powder
- 1 tsp of red chilli powder (kashmiri chilli powder)
- 1/2 tsp of garam masala
- 1/4 cup of yogurt
- 1/2 tsp of salt
- 1 tsp of oil

For curry

- 2 medium size onions finely chopped
- 1 tsp of ginger garlic paste
- 1/2 tsp of cumin seeds
- 2 tsp of red chilli powder (kashmiri chilli powder)
- 1 tsp of coriander powder
- 1 tbsp of chicken masala ( I used everest chicken masala)
- salt as per taste
- fresh coriander
- 2 tbsp of oil

Procedure:

Chicken marination procedure :

- Wash the chicken well.
- Add ginger-garlic paste, turmeric powder, red chilli powder, garam masala. yogurt and mix well.
- Add salt, 1 tsp of oil and everything well.
- rest it for 30 minutes.

Chicken curry :

1.  Keep the pressure cooker on flame and add 2 tbsp of oil. If you like butter, you can add 2-3 tbsp of butter.
2.  When the oil is heated, add cumin seeds.
3.  Add chopped onions and fry them on medium flame until onions become golden in colour. You can add onion paste instead of chopped onion.
4.  Add ginger-garlic paste and fry few seconds. I am not using tomatoes. If you want to use tomato, add chopped tomato or tomato puree.
5.  When the onions turn golden-brown, add marinated chicken and mix well.
6.  Cook the chicken on medium flame for 6-7 minutes. keep stirring.
7.  Add coriander powder, red chilli powder, chicken masala or 1 tsp of garam masala, salt to taste and mix everything well.
8.  Add 1/2 cup of hot water and mix. If you like thin curry, add around 1 cup of water.
9.  Close the lid and cook it on medium flame until 4 whistles. Then let it cool down.
10. Open the lid and mix well. garnish with fresh coriander.
11. Serve the spicy and tasty chicken curry with naan, roti or rice.

Tips :

- In this recipe i used chicken breast that’s why cooked the chicken till 4 whistles. If are you using mix chicken cook on medium flame until 5 whistles. also cooking time is depends on chicken pieces. if the chicken pieces very small, they don’t need 4-5 whistles, 3 whistles are enough.
