अंकुरित मूंग आप्पे एक पौष्टिक और स्वादिष्ट दक्षिण भारतीय नाश्ता है, जिसमें मूंग के अंकुरित दानों का उपयोग किया जाता है। इसे आप ब्रेकफास्ट या नाश्ते के रूप में बना सकते हैं। यह एक साधारण अंकुरित मूंग आप्पे की रेसिपी है।


## सामग्री:
- 1 कप अंकुरित मूंग
- ½ कप चावल
- 2-3 बड़े चम्मच बारीक कटा हुआ प्याज
- 1/2 बड़े चम्मच बारीक कटी हुई गाजर
- 3-4 बड़े चम्मच बारीक कटी शिमला मिर्च
- नमक स्वाद अनुसार
- ¼ छोटा चम्मच बेकिंग सोडा
- 2 बड़े चम्मच दही
- ¼ छोटा चम्मच हल्दी पाउडर
- 1/2 छोटा चम्मच जीरा पाउडर
- 1 चम्मच धनिया पाउडर
- ½ छोटा चम्मच जीरा
- ½ छोटा चम्मच सरसों के बीज
- तेल और घी

## बनाने की विधी :
- अंकुरित मूंग को अच्छी तरह धो लें और अतिरिक्त पानी निकाल दें। आप या तो स्टोर से खरीदे गए स्प्राउट्स का उपयोग कर सकते हैं या मूंग की फलियों को रात भर भिगोकर और फिर उन्हें कुछ दिनों तक अंकुरित होने देकर घर पर ही अंकुरित कर सकते हैं।
- चावल को धोकर पर्याप्त पानी में कम से कम 4-6 घंटे या रात भर के लिए भिगो दें।
- भीगने के बाद चावल से पानी निकाल दीजिये।
- चावल को ग्राइंडर या हाई-स्पीड ब्लेंडर में केवल 1-2 बड़े चम्मच पानी के साथ पीसकर चिकना घोल बना लें।
- उसी मिक्सर के जार में अंकुरित मूंग, दही डालें और पीसकर मुलायम घोल बना लें।
- इस बैटर को एक बड़े मिक्सिंग बाउल में डालें।
- उसमे  कटा हुआ प्याज, गाजर, शिमला मिर्च, हरा धनिया, हल्दी पाउडर, जीरा पाउडर, धनिया पाउडर, नमक डालें। सभी चीजों को अच्छे से मिला लीजिए.
- बेकिंग सोडा डालें और अच्छी तरह मिलाएँ।
- अप्पे पैन को मध्यम आंच पर गर्म करें और प्रत्येक cavity में तेल या घी की कुछ बूंदें डालें।
- प्रत्येक cavity में एक चम्मच घोल डालें, जिससे वे लगभग 3/4 तक भर जाएँ।  पैन को ढक दें और अप्पे को मध्यम-धीमी आंच पर कुछ मिनट तक पकने दें।
- जब निचली सतह सुनहरे भूरे रंग की और कुरकुरी हो जाए, तो अप्पे को पलटने के लिए एक चम्मच का उपयोग करें और दूसरी तरफ से पकाएं। यदि आवश्यक हो तो आप किनारों के आसपास थोड़ा और तेल या घी डाल सकते हैं।
- जब दोनों तरफ से सुनहरे भूरे रंग के हो जाएं और अप्पे पूरी तरह से पक जाएं, तो उन्हें पैन से निकालें और एक सर्विंग प्लेट पर रखें।
- अंकुरित मूंग अप्पे को नारियल की चटनी, टमाटर की चटनी या सांबर के साथ गर्मागर्म परोसें।
- ये अंकुरित मूंग के अप्पे न सिर्फ स्वादिष्ट होते हैं बल्कि पौष्टिक भी होते हैं।

मोड आलेल्या मुगाचे अप्पे अंकुरलेले मूग (मुगाचे) अप्पे हे एक निरोगी आणि स्वादिष्ट दक्षिण भारतीय नाश्ता डिश आहे. हे अंकुरलेले मुगाचे आप्पे चवदार तर असतातच पण पौष्टिक असतात. अंकुरित मुगामध्ये भरपूर प्रमाणात nutrition म्हणजे च की Vitamin B,C, minerals, iron असतात. 

## साहित्य:
- 1 कप अंकुरलेली मूग बीन्स
- ½ कप तांदूळ
- 2-3 चमचे बारीक चिरलेला कांदा
- ½  चमचे बारीक चिरलेले गाजर
- 3-4 चमचे बारीक चिरलेली सिमला मिरची
- चवीनुसार मीठ
- ¼ टीस्पून बेकिंग सोडा
- 2 चमचे दही 
- ¼ टीस्पून हळद
- 1/2 टीस्पून जिरे पावडर
- 1 टीस्पून धने पावडर
- ½ टीस्पून जिरे
- ½ टीस्पून मोहरी
- तेल किंवा साजूक तूप

## पाककृती :

- अंकुरलेले मूग चांगले धुवा आणि जास्तीचे पाणी काढून टाका. तुम्ही एकतर दुकानातून विकत घेतलेले अंकुर वापरू शकता किंवा रात्रभर मूग बीन्स भिजवून घरी अंकुरू शकता 
- तांदूळ धुवा आणि कमीतकमी 4-6 तास किंवा रात्रभर पुरेशा पाण्यात भिजवा.
- भिजवल्यानंतर तांदूळातील पाणी काढून टाकावे.
- तांदूळ ग्राइंडरमध्ये किंवा हाय-स्पीड ब्लेंडरमध्ये फक्त 1-2 चमचे पाणी घालून मऊ पीठ बनवा.
- त्याच मिक्सर च्या भांड्यात अंकुरलेले मूग, दही घालून बारीक वाटून घ्या.
- हे पिठ एका मोठ्या मिक्सिंग बाऊलमध्ये कडून घ्या .
- चिरलेला कांदा, गाजर, भोपळी मिरची, कोथिंबीर, हळद, जिरेपूड, धनेपूड, मीठ घाला. सर्व काही चांगले मिक्स करा .
- बेकिंग सोडा घालून मिक्स करा.
- अप्पे पॅन मध्यम आचेवर गरम करा आणि प्रत्येक पोकळीत तेल किंवा तुपाचे काही थेंब घाला.
- प्रत्येक पोकळीमध्ये एक चमचा बॅटर घाला, ते सुमारे 3/4 पूर्ण भरून टाका. पॅन झाकून ठेवा आणि अप्पे मध्यम-मंद आचेवर काही मिनिटे शिजू द्या.
- जेव्हा खालची बाजू सोनेरी तपकिरी आणि कुरकुरीत होईल, तेव्हा अप्पे पलटवण्यासाठी स्कीवर किंवा चमचा वापरा आणि दुसरी बाजू शिजवा. गरज असल्यास कडाभोवती थोडे अधिक तेल किंवा तूप घालू शकता.
- दोन्ही बाजू सोनेरी तपकिरी झाल्या आणि अप्पे शिजले की पॅनमधून काढून सर्व्हिंग प्लेटवर ठेवा.
- अंकुरलेले मूग अप्पे नारळाची चटणी, टोमॅटो चटणी किंवा सांबार सोबत सर्व्ह करा.

Ankurit moong ke appe | Healthy Appe Recipe | अंकुरित मूंग के अप्पे | 
Sprouted moong (mung bean) appe is a healthy and delicious South Indian snack or breakfast dish. It is similar to the more popular paniyaram. Here's a simple recipe to make sprouted moong appe.


## Ingredients
- 1 cup sprouted moong beans
- ½ cup rice 
- 2-3 tbsp of  finely chopped onions
- ½ tbsp of finely chopped carrots
- 3-4 tbsp of finely chopped capsicum
- Salt to taste
- ¼ tsp of baking soda
- 2 tbsp of yoghurt (curd)
- ¼ tsp of turmeric powder
- 1/2 tsp of cumin powder
- 1 tsp of coriander powder 
- ½ tsp of cumin seeds
- ½ tsp of mustard seeds
- oil or ghee

## Procedure :
- Wash the sprouted moong beans thoroughly and drain any excess water. You can either use store-bought sprouts or sprout them at home by soaking moong beans overnight and then allowing them to sprout over a couple of days.
- Wash the rice and soak it in enough water for at least 4-6 hours, or overnight.
- After soaking, drain the water from the rice.
- Grind the rice in a wet grinder or a high-speed blender with just 1-2 tbsp of water to make a smooth batter. 
- Add sprouted moong beans, yoghurt in the same jar and grind it into a smooth batter.
- Transfer this batter to a large mixing bowl.
- In a mixing bowl, add chopped onions, carrots, bell peppers, cilantro, turmeric powder, cumin powder, coriander powder, salt. Mix everything well.
- Add baking soda and mix well.
- Heat the appe pan on medium heat and add a few drops of oil or ghee in each cavity.
- Pour a spoonful of the batter into each cavity, filling them up to about 3/4 full. Cover the pan and let the appe cook on medium-low heat for a few minutes.
- When the bottom side turns golden brown and crisp, use a skewer or spoon to flip the appe over and cook the other side. - You can add a little more oil or ghee around the edges if needed.
- Once both sides are golden brown and the appe is cooked through, remove them from the pan and place them on a serving plate..
- Repeat the process for the remaining batter, adding a little oil to each cavity before pouring in the batter.
- Serve the sprouted moong appe hot with coconut chutney, tomato chutney, or sambar.
