Turai Curry Recipe
Ingredients
- ridged gourd
- 1 chopped onion
- 1 tbsp of sesame seeds
- dry coconut as required
- 4-5 garlic cloves
- 1 inch ginger
- ¼ tsp of turmeric powder
- 1 tbsp of red chilli powder
- 1 tsp of goda Masala
- coriander leaves
- salt to taste
- oil
Procedure:-
- Wash and peel the ridged gourd.
- Cut the ridged gourd into small pieces.
- Heat the pan.
- Add sesame seeds and roast it on medium flame.
- Take it out.
- Add coconut and roast it on medium flame until it turns golden. (If you don’t like roasted coconut, avoid this step.)
- Take it out and add 1 tsp of oil.
- Add onion and cook it on medium flame for 1 minute.
- Add ginger, garlic and cook it all on medium flame until it turns golden brown.
- Take it out in a plate and let it cool down.
- Take grinder jar and add cooked onion, garlic, ginger, roasted sesame seeds, coconut and add small amount of water.
- Grind it into smooth paste.
- Heat a pan.
- Add 1 tbsp of oil.
- Reduce the flame.
- Add turmeric powder, 1 tsp of red chilli powder and mix it.
- Add prepared paste and mix it well.
- Add remaining chilli powder, goda masala and mix it. (You can add garam masala instead of goda masala).
- Cook it on medium flame until oil comes out.
- Fill the masala in ridge gourd pieces or you can add directly.
- Add salt to taste and mix it.
- Cover the pan and cook it for 1-2 minutes on low flame.
- Add water as required and mix it.
- Add coriander leaves and mix it.
- Boil it.
- Cover the pan with lid and cook it for 10-12 minutes on low flame.
- Open the lid and mix it.
- Take it out in a serving bowl and enjoy with roti, rice etc.
