Turai Ki Chutney Recipe
Ridged gourd chutney is a famous recipe in south India. It’s very tasty and delicious for side dish. This chutney is made with ridged gourd and onion. It is cooked then grinded it into smooth paste. We pour the seasoning on the top of it. We can eat this chutney with idli, dosa or utappam as well.
Ingredients
- ridged gourd
- 1 chopped onion
- 3-4 garlic cloves
- ½ tsp of split black gram
- 2-3 chopped green chillies
- 2-3 dried red chillies
- ½ tsp of mustard seeds
- ½ tsp of cumin seeds
- Pinch of asafoetida
- 50gm tamarind
- ½ tsp of sugar

- salt to taste

Procedure:-
- Peel and cut the ridged gourd into small pieces.
- Soak the tamarind in 2-3 tbsp of water.
- Turn on the gas and keep the pan on gas.
- Add 1 tsp of oil.
- When the oil is heated, add garlic cloves and green chilli.
- Saute it.
- Add chopped onion and saute it for few minutes on medium flame.
- Add ridged gourd pieces and mix it.
- Add salt to taste and mix it.
- Cover the pan and cook it for 4-5 minutes on low flame.
- Open the lid and mix it.
- Take it out in a bowl and let it cool down completely.
- Take the grinder jar.
- Add cooked ridged gourd, tamarind juice and chopped coriander in a grinder jar.
- Grind it into smooth paste.
- Take it out in a bowl and add sugar and mix it.
- For seasoning, keep the seasoning pan on gas.
- Add 1 tbsp of oil.
- When the oil is heated, add mustard seeds.
- When the mustard seeds crackle, split black gram.
- Add cumin seeds, asafoetida and mix.
- Add dried red chilli, curry leaves and mix it.
- Turn off the flame.
- Pour the seasoning on the top of grinded chutney and mix it lightly.
- Serve the ridged gourd chutney with idli, dosa , utappam etc.
