Rasmalai Recipe

Ingredients- सामग्री

  • 2 litres Milk (दूध)
  • 1 ½ cup Sugar (चीनी)
  • 2 tbsp of lemon juice (नींबू का रस)
  • ½ tsp of cardamom powder (इलायची पाउडर)
  • 5-6 chopped almonds (बादाम)
  • 5-6 chopped pistachios (पिसता)
  • Few strands of saffron (केसर)

Procedure:-

Chenna / paneer recipe:

  1. Turn on the gas and add 1 ltr of milk in the pan.
  2. Boil the milk.
  3. Add lemon juice and stir till milk curdles completely.
  4. Take a big bowl, strainer and muslin clothes.
  5. Drain the curdled milk and squeeze off the excess water.
  6. Add normal water on the paneer and squeeze the water.
  7. Knead the paneer for 10-15 minutes.
  8. Make the small balls and flatten. Keep it aside.

Sugar syrup recipe:

  1. Add 2 cups of water in a sauce pan.
  2. Add 1 cup of sugar.
  3. Boil the syrup for 10 minutes.
  4. Add prepared paneer balls.
  5. Cover the lid and cook it for 10-15 minutes on medium flame.

Rabri / rabdi recipe:

  1. Add 1 ltr of milk in a pan.
  2. Boil the milk until it becomes thick( reduce the milk by one-third)
  3. Add 3 tbsp of sugar, cardamom powder and saffron milk.
  4. Mix it. Add chopped almonds,pistachios.
  5. Mix it well and boil it for another 2-3 minutes.
  6. Turn off the gas. Rabdi is ready.
  7. Let it cool down completely.

Rasmalai recipe:

  1. Pour the chilled rabdi in a bowl.
  2. Squeeze the paneer ball off sugar syrup.
  3. Add paneer ball in the rabdi bowl.
  4. Garnish with chopped almonds and pistachios.
  5. Rasmalai is ready to eat.
