Maharashtrian Pooran Poli Recipe

Ingredients

  •       2 cups of wheat flour
  •       1 cup of split bengal gram
  •       1 cup of jaggery
  •       ½ tsp of fennel powder
  •       ½ tsp of dry ginger powder
  •       ¼ tsp of cardamom powder
  •       salt to taste
  •       1 tbsp of oil
  •       ghee

Procedure

  1.   Take wheat flour in a bowl.
  2.   Add salt to taste and 1 tbsp of oil and mix it well.
  3.   Add small amount of water at a time and make the soft dough.
  4.   Knead the dough well.
  5.   Cover the dough and keep it aside.
  6.   Wash the split bengal gram with water at least 2-3 times.
  7.   Add split beggal gram in pressure cooker.
  8.   Add 2 ½ cup of water and ¼ tsp of salt.
  9.   Close the pressure cooker with lid.
  10. Keep the pressure cooker in the gas.
  11. Cook it up to 4-5 whistles on medium flame.
  12. Release the pressure cooker steam.
  13. Open the lid carefully.
  14. Strain the excess water with the help of strainer.
  15. Heat a pan.
  16. Add cooked split bengal gram (chana dal) in the pan.
  17. Cook it on medium flame until it becomes thick.
  18. Add jiggery and mix.
  19. Cook it on medium flame until puran becomes thick.
  20. Keep stirring continuously.
  21. When the mixture becomes thick, reduce the flame.
  22. Add cardamom powder, fennel powder, dry ginger powder and mix it well.
  23. Make the puran like a dough.
  24. Let it cool down.
  25. Grind the puran into smooth mixture.
  26. Or add the puran in the strainer and press with the help of spoon.
  27. Make the smooth puran.
  28. Knead the wheat flour dough.
  29. Make small balls.
  30. Take a ball and dip in the wheat flour.
  31. Press it in the middle with the help of thumb.
  32. Fill 2-3 tbsp of puran in it.
  33. Close all the edges gently.
  34. Dip it in the dry wheat flour.
  35. Press it with the help of palm and make flat and round.
  36. Dust the wheat flour on the rolling board.
  37. Roll the poli gently.
  38. Heat a pan.
  39. Grease the pan with ghee.
  40. Place the poli on tawa.
  41. Cook the poli on both sides on medium flame and apply ghee on both sides.
  42. Take out the puran poli in a plate.
  43. Make all puran polis in a similar way.
