Maharashtrian Pooran Poli Recipe
Ingredients
- 2 cups of wheat flour
- 1 cup of split bengal gram
- 1 cup of jaggery
- ½ tsp of fennel powder
- ½ tsp of dry ginger powder
- ¼ tsp of cardamom powder
- salt to taste
- 1 tbsp of oil
- ghee
Procedure
- Take wheat flour in a bowl.
- Add salt to taste and 1 tbsp of oil and mix it well.
- Add small amount of water at a time and make the soft dough.
- Knead the dough well.
- Cover the dough and keep it aside.
- Wash the split bengal gram with water at least 2-3 times.
- Add split beggal gram in pressure cooker.
- Add 2 ½ cup of water and ¼ tsp of salt.
- Close the pressure cooker with lid.
- Keep the pressure cooker in the gas.
- Cook it up to 4-5 whistles on medium flame.
- Release the pressure cooker steam.
- Open the lid carefully.
- Strain the excess water with the help of strainer.
- Heat a pan.
- Add cooked split bengal gram (chana dal) in the pan.
- Cook it on medium flame until it becomes thick.
- Add jiggery and mix.
- Cook it on medium flame until puran becomes thick.
- Keep stirring continuously.
- When the mixture becomes thick, reduce the flame.
- Add cardamom powder, fennel powder, dry ginger powder and mix it well.
- Make the puran like a dough.
- Let it cool down.
- Grind the puran into smooth mixture.
- Or add the puran in the strainer and press with the help of spoon.
- Make the smooth puran.
- Knead the wheat flour dough.
- Make small balls.
- Take a ball and dip in the wheat flour.
- Press it in the middle with the help of thumb.
- Fill 2-3 tbsp of puran in it.
- Close all the edges gently.
- Dip it in the dry wheat flour.
- Press it with the help of palm and make flat and round.
- Dust the wheat flour on the rolling board.
- Roll the poli gently.
- Heat a pan.
- Grease the pan with ghee.
- Place the poli on tawa.
- Cook the poli on both sides on medium flame and apply ghee on both sides.
- Take out the puran poli in a plate.
- Make all puran polis in a similar way.
