Mixed Vegetable Sabzi
Mix veg is made during winter season. Mix veg is called as bhogichi bhaji in Maharashtra. It is prepared a day before Makar sankranti. This mix veg curry is eaten with bhajri bhakri. We can eat with roti, rice or moong dal khichadi as well. It’s very tasty and delicious curry recipe.
Ingredients
- Carrot
- brinjal
- black gram
- potato
- val papdi
- green peas
- 1/3 cup of roasted peanuts
- 1 tbsp of roasted sesame seeds
- dry coconut as required
- 4-5 garlic cloves
- 1 inch ginger
- ¼ tsp of turmeric powder
- 1 tbsp of red chilli powder
- 1 tsp of goda masala
- 1 tsp of coriander powder
- coriander leaves
- 1 tbsp of tamarind pulp
- salt to taste

Procedure: –
- Take a grinder jar.
- Add roasted peanuts, sesame seeds, coconut, ginger and garlic in a grinder jar and grind it into smooth paste.
- Turn on the gas and put the yok (pan) on the gas.
- Add 1 tbsp of oil.
- When the oil is heated, add sesame seeds.
- Add turmeric powder, red chilli powder, coriander powder and mix it well.
- Add grated masala and mix it.
- Add ½ cup of water and mix.
- Add goda masala and mix it.
- Cook it on medium flame until oil comes out.
- Add chopped vegetables, raw peanut and mix it well with masala.
- Add salt to taste and mix it.
- Add water as required and mix it.
- Add tamarind pulp and mix it.
- Boil it.
- Reduce the flame.
- Add chopped coriander.
- Cover the pan with lid and cook it for 10-15 minutes on low flame.
- Once the veggies are cooked well, open the lid and mix it.
- Serve the mix veg curry in a serving bowl.
- Garnish it with sesame seeds and fresh coriander.
- Enjoy the bhogichi bhaji / mix veg curry with bhajri bhakri, roti or rice.
