Matar Pulao Recipe
Ingredients
- 1 cup of basmati rice (बासमती चावल)
- ½ cup of peas (मटर)
- 1 tbsp of ghee (घी)
- 3 chopped green chillies (हरी मिर्च)
- 12-15 cashew nuts (काजू)
- 3-4 bay leaf (तेज पत्ता)
- 4-5 cloves (लौंग)
- mace (जावित्री )
- 1 cinnamon stick (दालचीनी)
- 1 black cardamom (बड़ी इलायची)
- 2-3 green cardamom (हरी इलायची)
- salt to taste (नमक)
Procedure:-
- Wash the basmati rice and soak it for approx. 10-15 mins then drain the water.
- Turn on the flame and keep the pan on gas.
- Add 1 tbsp of ghee.
- Heat the ghee. Add all whole spices (bay leaf, cloves, cinnamon, black cardamom, green cardamom and mace.
- Saute it.
- Add cashew nuts and green chilli.
- Fry it until it turns golden brown on medium flame. Don’t over fry.
- Add peas and mix it.
- Cook it on medium flame for 2-3 minutes.
- Add soaked basmati rice and mix it well.
- Add 1 ½ cup of water for 1 cup of rice.
- Add salt to taste and mix it well.
- Cook it on high flame for 2 minutes.
- Cover the pan and cook the rice on low flame for approx. 10-12 mins.
- Matar pulao is ready. Mix it gently.
- Serve the hot Matar pulao with raita or any curry.
