Matar Pulao Recipe

Ingredients

  1. 1 cup of basmati rice (बासमती चावल)
  2. ½ cup of peas (मटर)
  3. 1 tbsp of ghee (घी)
  4. 3 chopped green chillies (हरी मिर्च)
  5. 12-15 cashew nuts (काजू)
  6. 3-4 bay leaf (तेज पत्ता)
  7. 4-5 cloves (लौंग)
  8. mace (जावित्री )
  9. 1 cinnamon stick (दालचीनी)
  10. 1 black cardamom (बड़ी इलायची)
  11. 2-3 green cardamom (हरी इलायची)
  12. salt to taste (नमक)

Procedure:-

  1. Wash the basmati rice and soak it for approx. 10-15 mins then drain the water.
  2. Turn on the flame and keep the pan on gas.
  3. Add 1 tbsp of ghee.
  4. Heat the ghee. Add all whole spices (bay leaf, cloves, cinnamon, black cardamom, green cardamom and mace.
  5. Saute it.
  6. Add cashew nuts and green chilli.
  7. Fry it until it turns golden brown on medium flame. Don’t over fry.
  8. Add peas and mix it.
  9. Cook it on medium flame for 2-3 minutes.
  10. Add soaked basmati rice and mix it well.
  11. Add 1 ½ cup of water for 1 cup of rice.
  12. Add salt to taste and mix it well.
  13. Cook it on high flame for 2 minutes.
  14. Cover the pan and cook the rice on low flame for approx. 10-12 mins.
  15. Matar pulao is ready. Mix it gently.
  16. Serve the hot Matar pulao with raita or any curry.
