Kapni Recipe
Kapni is a very popular sweet recipe usually made during Diwali season. It is also made during wedding or any special occasion. It is generally made in diamond shape and tastes very nice.
Ingredients- सामग्री
- 1 cup of wheat flour (गेहूं का आटा)
- 1/3 cup of gram flour (बेसन)
- 1 tbsp of rice flour (चावल का आटा)
- 1 tbsp of Sorghum flour (Jowar ) ज्वार का आटा
- ¾ cup of jaggery (गुड़)
- ½ tsp of fennel powder (सौंफ पाउडर )
- ½ tsp of ginger powder (सोंठ)
- poppy seeds (खसखस)
- Salt to taste (नमक)
- Oil (तेल)
Procedure:-
- Turn on the flame and put the sauce pan.
- Add ½ cup of water in a sauce pan.
- Add jaggery and keep stirring until the jaggery is dissolved.
- Turn of the flame.
- Let it cool down.
- Mix the wheat flour, gram flour, rice flour and sorghum flour in a big bowl.
- Add fennel powder, ginger powder and pinch of salt. Mix it well.
- Add jaggery syrup and make thick dough.
- If you need water, you can add as required.
- Cover the dough and keep it aside for 10-15 minutes.
- After 15 minutes, Knead the dough well.
- Take a small amount of dough and dust the gram flour or wheat flour on board.
- Roll it on thick sheet.
- Spread the poppy seeds on top of rolled sheet.
- Cut out the rolled sheet in diamond shape measuring 1 ½ – 2 inch long.
- Heat the oil in frying pan.
- Fry the kapni on medium flame until it turns golden brown.
- Take out the fried kapni on absorbent paper.
- Let it cool down completely then store it in an air tight container.
- You can store the kapni for 15-20 days.
