Ghewar recipe
Ghewar is a Rajasthani sweet recipe made from all purpose flour and sugar syrup. It can be made in different ways like plain and malai ghewar. You can also make this recipe during Diwali.
Ingredients- सामग्री
For batter
- 1 cup of plain flour (मैदा)
- ¼ cup of ghee (घी)
- 1 cup of cold water (ठंडा पानी)
- 1 tbsp of lemon juice(नींबू का रस)
- Oil / Ghee for frying (तेल/ घी)
For syrup
- 1 cup of sugar (चीनी)
- saffron (केसर)
- 1 tsp of cardamom powder (इलायची पाउडर)
For garnishing
- Chopped dry fruits for garnish (ड्राई फ्रुट)
Procedure:-
- Take a big bowl.
- Add ¼ cup of ghee and cold water in a bowl.
- Whisk until it gets creamy texture.
- Add plain flour and small amount of water.
- Mix it and make lump free batter.
- When the batter become smooth, then add remaining water and mix it.
- Make the batter having running consistency. Add lemon juice and mix it well.
- Batter is ready. Keep it aside.
- Keep the kadai on gas and add enough oil to fry the ghevar.
- Heat the oil.
- Keep the ghevar ring in the center of kadai.
- Take batter in a spoon or sauce bottle.
- Pour the small amount of batter inside the ring.
- Fry it and keep adding batter. Repeat this 5-6 times.
- Fry the ghevar until it becomes golden.
- Take out the ghevar using stick and keep it on absorbent paper or cooling rack
- Make all ghevar in similar way
- Make a sugar syrup
- Add ½ cup of water and 1 cup of sugar in a pan.
- Boil it and make single thread consistency syrup.
- When the sugar syrup is ready, turn off the flame.
- Dip the ghevar into sugar syrup and keep it on a serving plate.
- Garnish the ghevar with chopped dry fruits or rabri.
- Tasty ghevar is ready to eat. Enjoy 🙂
Tip: –
- You can store the ghevar for 20 -25 days but without syrup and rabri.
