Chole Paratha Recipe

Ingredients

  • 1 cup of wheat flour
  • boiled chickpeas (cholle)
  • 1 chopped onion
  • 1 tbsp of ginger and garlic paste
  • 1 tsp of red chilli powder
  • 1 tsp of garam masala
  • 1 tsp of coriander and cumin seeds powder
  • 1/3 tsp of turmeric powder
  • 1 tsp of cumin seeds
  • coriander leaves
  • salt to taste
  • oil

Procedure:-

  1. Wash the chickpeas and soak it for approx. 6-8 hours or overnight.
  2. Boil the chickpeas in pressure cooker.
  3. Take 1 cup of wheat flour in a bowl.
  4. Add salt to taste and 1 tsp of oil into wheat flour and mix it.
  5. Add water and make smooth dough.
  6. Knead the dough well.
  7. Cover the bowl and keep it aside.
  8. Smash the cholle with spoon or smasher.
  9. Turn on the flame and keep the pan on stove..
  10. Add 1 tbsp of oil into pan.
  11. Heat the oil then add cumin seeds and chopped onion.
  12. Cook the onion approx. 1-2 mins on low-medium flame.
  13. Reduce the flame.
  14. Add ginger and garlic paste, turmeric powder, coriander and cumin powder, red chilli powder, garam masala and coriander leaves.
  15. Mix it well.
  16. Add smashed cholle and mix it well.
  17. Cover the pan and cook it for 2 mins on low flame.
  18. Cholle stuffing is ready for making paratha.
  19. Take out cholle stuffing in a bowl.
  20. Take a rolling board.
  21. Make small lump from dough
  22. Dust the dry flour on rolling board and roll out into 2 to 3 inch diameter then add cholle stuffing over this rolled poori.
  23. Close the all sides and Dust the dry flour on rolling board.
  24. Roll out it 5-6 inch diameter thick paratha.
  25. Heat the tawa (flat pan) and place the rolled paratha over the pan.
  26. Roast the paratha on both sides until it turns brown.
  27. Apply the oil or ghee over the paratha.
  28. When the paratha is roasted well, take it out in a plate.
  29. Serve the hot cholle paratha with green chutney or any sauce.
