Vegetable Biryani Recipe

Veg biryani means mix vegetables spicy rice. It is made with long grain rice, vegetables, whole spices and ground spices. Veg biryani is a very tasty rice recipe for any occasion.

Ingredients

  • 1 cup of basmati rice
  • green peas
  • red capsicum
  • green capsicum
  • french beans
  • carrot
  • potatoes
  • cauliflower
  • 10-15 cashew nuts
  • 3-4 chopped garlic cloves
  • 1 inch chopped ginger
  • ½ tsp of turmeric powder
  • 1 tbsp of red chilli powder
  • ½ cup of yogurt
  • Fried onion
  • 1 chopped tomato
  • 3 bay leaf
  • 4-5 Black Pepper
  • 4-5 cloves
  • Cinnamon
  • 2 black cardamom
  • 3-4 green cardamom
  • 1 star anise
  • 15-20 saffron threads
  • coriander leaves
  • 1 tbsp of ghee
  • 2 tbsp of oil
  • salt to taste

Procedure:-

  1. Soak the saffron in 1 tbsp of water.
  2. Wash and soak the basmati rice for 15-20 minutes.
  3. Heat a pan and add 1 tsp of oil in it.
  4. Add 2 bay leaf,2-3 Black Pepper,3 cloves, Cinnamon, 2 green cardamom
  5. Add fried onion and saute it.
  6. Add 1 ½ cups of water and mix it.
  7. Add 1 tsp of yogurt and mix it.
  8. Add salt to taste and mix.
  9. Boil it and add soaked long gran basmati rice and mix it well.
  10. Cook rice until it is half cooked.
  11. Drain the excess water and keep it aside.
  12. Keep another pan on gas.
  13. Add 1 tbsp of oil.
  14. When the oil is heated, add chopped ginger, garlic, Black Pepper,cloves, Cinnamon, black cardamom, green cardamom, star anise and cashew nuts.
  15. Saute it.
  16. Add fried onion and mix it.
  17. Add chopped tomatoes and mix it well.
  18. Reduce the flame.
  19. Add 2 tbsp of yogurt and mix it.
  20. Add turmeric powder, red chilli powder, salt to taste and mix it.
  21. Add chopped vegetables and mix it.
  22. Add 2-3 tbsp of water and mix it well.
  23. Cover the pan with lid and cook it for 3-4 minutes on low flame.
  24. Open the lid and mix it well.
  25. Add chopped coriander, fried onion and 1 tsp of ghee.
  26. Don’t mix it. Give the layer.
  27. Add half cooked rice and spread it evenly.
  28. Spread coriander, fried onion and saffron (don’t mix it).
  29. Add some ghee and cover the pan with lid and cook it for 7-8 minutes on low flame.
  30. Open the lid carefully.
  31. Take out the veg biryani side by side (don’t mix it).
  32. Serve the hot veg biryani in a serving plate.
  33. Garnish with fresh coriander, fresh mint leaves.
