Bharwan Baingan Masala
Ingredients
- 4-5 small brinjal
- 1 chopped onion
- 1 chopped tomatoes
- Fresh coconut
- ginger
- 4-5 garlic cloves
- 1 tbsp of red chilli powder
- 1 tsp of garam masala
- 1 tsp of coriander and cumin seeds powder
- 1/3 tsp of turmeric powder
- 1 tsp of cumin seeds
- coriander leaves
- salt
- olive oil
Procedure:-
- Turn on the flame.
- Keep the pan on gas and heat the pan.
- Add ½ tsp of oil then add chopped onion.
- Cook the onion on medium flame for approx. 2 mins.
- Add ginger, garlic and coconut then fry until it turns golden brown.
- Add chopped tomatoes, mix it well.
- Cover the pan and cook it for approx. 2-3 mins on low-medium flame.
- Let it cool down.
- Take out in grinder jar and grind it into smooth paste.
- Heat the pan and add 1 tbsp of olive oil.
- Add cumin seeds. If the cumin seeds crackle, reduce the flame.
- Add turmeric powder, coriander and cumin powder, red chilli powder and fresh coriander leaves.
- Mix it well.
- Add onion tomato paste and mix it.
- Cook it on low – medium flame until oil comes out.
- Turn off the flame.
- Cut all brinjals.
- And fill the cooked masala into brinjals.
- Turn on the flame and add water in pan as required (Pan may have left over masala).
- After curry boils, add brinjals into the pan.
- Mix it and cover the pan and cook for approx. 10-15 mins on low flame.
- Stir the curry while cooking brinjals
- Bharwan Baingan Masala is ready.
