Bharwan Baingan Masala

Ingredients

  • 4-5 small brinjal
  • 1 chopped onion
  • 1 chopped tomatoes
  • Fresh coconut
  • ginger
  • 4-5 garlic cloves
  • 1 tbsp of red chilli powder
  • 1 tsp of garam masala
  • 1 tsp of coriander and cumin seeds powder
  • 1/3 tsp of turmeric powder
  • 1 tsp of cumin seeds
  • coriander leaves
  • salt
  • olive oil

Procedure:-

  1. Turn on the flame.
  2. Keep the pan on gas and heat the pan.
  3. Add ½ tsp of oil then add chopped onion.
  4. Cook the onion on medium flame for approx. 2 mins.
  5. Add ginger, garlic and coconut then fry until it turns golden brown.
  6. Add chopped tomatoes, mix it well.
  7. Cover the pan and cook it for approx. 2-3 mins on low-medium flame.
  8. Let it cool down.
  9. Take out in grinder jar and grind it into smooth paste.
  10. Heat the pan and add 1 tbsp of olive oil.
  11. Add cumin seeds. If the cumin seeds crackle, reduce the flame.
  12. Add turmeric powder, coriander and cumin powder, red chilli powder and fresh coriander leaves.
  13. Mix it well.
  14. Add onion tomato paste and mix it.
  15. Cook it on low – medium flame until oil comes out.
  16. Turn off the flame.
  17. Cut all brinjals.
  18. And fill the cooked masala into brinjals.
  19. Turn on the flame and add water in pan as required (Pan may have left over masala).
  20. After curry boils, add brinjals into the pan.
  21. Mix it and cover the pan and cook for approx. 10-15 mins on low flame.
  22. Stir the curry while cooking brinjals
  23. Bharwan Baingan Masala is ready.
