Sev ladoo recipe

These laddoos are generally made during Diwali. They are made up of besan sev and sugar syrup. You can make these laddoos during any festival as well as special occasions. It’s very tasty and delicious.

 Ingredients- सामग्री

  • 2 ½ cup of gram flour (बेसन)
  • 1 cup of sugar(चीनी)
  • 1 tbsp of raisins (किशमिश
  • 6-7 cashew nuts (काजू)
  • ½ tsp of cardamom powder (इलायची पाउडर)
  • Oil for fry (तेल)

Procedure:-

  1. Take gram flour in a big bowl.
  2. Add water in small amounts and make a lump free batter. It should be thick. Do not make thin.
  3. Cover the batter with lid and keep it aside for 8-10 minutes.
  4. Turn on the gas and keep a dip pan on gas for making sugar syrup.
  5. Add ½ cup of water for 1 cup of sugar in a pan.
  6. Boil it and make single thread consistency syrup.
  7. If the syrup is ready, keep it aside and cover it with lid.
  8. Keep the fry pan on gas and add oil in a pan to fry the sev.
  9. Take a murukkau maker with big hole jalis.
  10. Grease the  murukkau maker with oil & fill it with batter.
  11. Close the murukkau maker properly.
  12. After oil is heated, press the murukkau maker and make sev in round shape.
  13. Fry the sev on high flame until it becomes soft. Don’t let it harden.
  14. Take out the sev and put it in sugar syrup.
  15. Mix the sev in sugar syrup and cut the sev with the help of spoon.
  16. Repeat the step for all remaining sev in similar way.
  17. Mix the sev in sugar syrup very well. Add resins and cardamom powder and mix it well.
  18. If the mixture is hot, let it cool down for 5 mins.
  19. Then start making laddoos out of mixture. Take a small portion of mixture on the palm and make laddoos in round shape.
  20. Make all laddoos in similar way and keep it in a plate.

  22. Store these laddoos in an air tight container and you can eat up to 15-20 days.

Tips:

  1. You can make laddoos using jiggery as well
  2. If the sugar syrup is left over, make more sev and add into sugar syrup
  3. If the mixture is dry, you can add more syrup later on.
